AG Production, Alternative Education Programs

In Agriculture Production, students can expect to gain hands-on experience in farming and gardening and the science that goes along with it. Students will focus on Regenerative Agriculture in order to combat climate change, the history and current state of affairs in our local food sphere, and urban gardening and livestock. Students will also explore Agriculture careers and job opportunities in flowers, food, animal care, and horticulture.



Construction Technology, Alternative Education Programs

 An introductory course focusing on the building and construction trades. Students will be exposed to a variety of occupations in the trades, job site safety, labor market information as well as alternative energy and “Green Building” techniques.  

Construction Technology, Alternative Education and the Career Advancement Charter

Construction Technology at Sequoia Schools and the Career Academic Charter will focus on the building and construction trades. Students will be exposed to the variety of occupations in the trades, job site safety, Cal OSHA requirements, labor market information, job placement, also soft skill development related to getting and maintaining employment. Some projects will include creative endeavors such as hexagons, skateboards, boxes, benches, cutting boards, model framing projects etc.  We will create and learn together. 

Culinary Arts, Alternative Education and the Career Advancement Charter

This class is a combination of classic culinary tools and utilizing food as medicine. We hope to create an interactive  environment where we learn food traditions, techniques and provide even some meal planning (And ingredients) for students and their families. Our relationship with food, farming, the environment and our bodies is essential for our community to thrive. So we hope to hear and build from your experience and to learn while we play with our food. 

Music Production and Recording Arts, Alternative Education

This is an introductory class to music production and recording arts. We will be covering basic recording studio skills; including analog audio theory, digital audio, signal flow, microphones, mic placement and tracking. This class will also cover signal processing, recording and editing using a Digital Audio Workstation (DAW). 


Students will be learning about the careers available in the music industry and will become familiar with standard music industry business practices, as well as college pathways for music. Students will be learning techniques relevant to composing in a commercial song format and about sound design used in film.

Culinary Arts, District Magnet Program

This is an intensive cooking and culinary industry exploration class with a strong focus on the importance of industry food safety and  kitchen sanitation. Students acquire their CA Food Handler’s card. Culinary topics from the foundational basics of working with ingredient categories (dairy, eggs, poultry, fish, veg, salad etc), to regional and world cuisines exploring the cultural, geographic and other influences on the foods. Baking, chocolate, catering, agriculture and more. A full year (2 semester class). 

Introduction to Fire Protection, District Magnet Program North County

Course objectives include, exposing the students to fire department culture, nomenclature, philosophy and history of fire protection, hiring process, career opportunities, fire department functions, management, training, prevention, basic fire chemistry, and introduction to fire strategies and tactics for incident mitigation. Students will be provided orientation of the fire engine, fire truck, CalStar air ambulance, and AMR ambulance. Students will also be provided operational demonstrations such as; fire attack, ladders, hoselines, ventilation, and rescue. Additionally, students will learn ropes and knots, Self Contained Breathing Apparatus, and fire attack hoselines. Students will hear from guest speakers such as; firefighter, dispatcher, police officer, and paramedic.

One of the four pillars within the Information and Communication Technologies (ICT) California Career Technical Education Model.  This pathway will introduce students to the foundational concepts of Informational Technology (IT), Computer Networking across systems,  and the growing need of Cyber Security expertise.  As the use and application of technology grows exponentially every year, the need for experienced professionals will continue to grow.

Medical Assistant Program, Adult Magnet

The program consists of two semesters, MA I and MA II. MA I focuses on preparing the student for working in a medical office as an administrative MA. The student will learn the fundamentals of medical terminology, scheduling, billing, coding, and other daily operations of the medical office. In the clinical semester, MA II, students will focus on anatomy and physiology and various specialty procedures in order to assist a physician in an ambulatory setting . Students will become proficient in ID, SQ and IM injections as well as phlebotomy.  Students will also receive CPR ( BLS) certification and first aid training through the American Heart Association. In addition to formal training students will also complete a minimum of 160 hours of clinical internship. The goal of the program is to prepare the student to become an allied healthcare professional in order to achieve gainful employment in the community in which they live. The course also meets the needed criteria for the student to sit for either state certification through CCBMA or national registration through AMT. (399 Encinal) 

Dental Assisting, Adult Magnet Program

Dental Assisting is a two-semester program providing clinical instruction in all aspects as a member of the dental healthcare team.  Students will be focusing on basic dental sciences, infection control practices and earning the following certifications in Infection control, California Law, CPR and Dental Radiation Safety certification, including clinical chairside competencies/skills applicable in working in a dental office or clinic. Students will complete 240 Hrs. of Clinical internship in a dental office.
